I made this cake with a sponge cake mix.
Use a 9x13" rectangular cake pan. Be sure to grease and flour generously, so the cake comes out of the pan easily.
Mix batter, pour into pan and bake the cake according to the directions on the box. Once cooled, turn the cake upside down onto a covered tray or cake board.
I made vanilla frosting as per the women's weekly kids birthday cakes cook book, and colored with blue food coloring. Add food coloring one drop at a time, and mix well until it is the shade you want.
Frost the entire luau birthday cake with blue frosting. Press coconut onto approximately half of the cake, creating a "beach" and a natural (not straight) shoreline.
You can go back with extra icing and make waves by swirling more icing on the ocean part of the cake.
I bought several decorations from the Reject Shop: palm trees, a hula girl, polystyrene stars (painted and decorated as starfish), and dolphins. I also bought some chocolate candy-coated "rocks".
I placed the palm tree on the "beach". I had to pile a few "rocks" at the base to keep it stable.
I placed a plastic cup tealight candle, and piled "rocks" around it to partially cover the cup (to create a "bonfire"). Then I put the hula girl, and a drink umbrella to look like a beach umbrella.
Finally I placed the dolphins to look like they were jumping out of the ocean.

I used a chocolate box mix, and made frosting from a recipe I found online. (You can use canned frosting instead.) I tinted the frosting blue with organic food coloring, and then used organic sugar on the bottom half for the sand.
Two days before the party, I made chocolate molds to put on top of the cake. (Definitely a two or three person job, especially if you are also taking care of the kids!)
I bought little plastic palm trees. Any beach theme decoration would work. I got my ideas from other cakes on this site.
