Earthquake Cake

Ingredients:

  • 1 cup pecans, chopped
  • 1 cup flaked coconut
  • 1 German chocolate or Swiss chocolate cake mix
  • 1 (16 oz.) box powdered sugar
  • 1 stick margarine, room temperature
  • 1 (8 oz.) pkg. cream cheese, room temperature
  • 1 tsp. vanilla ( optional)

Sprinkle pecans and coconut in sprayed 9x13 inch pan. Mix cake as directed on package using eggs, water, and oil. Pour batter over pecans and coconut. Mix sugar, margarine, cream cheese, and vanilla with electric mixer until fluffy.

Place tablespoons of cream cheese mixture on top of batter. To make a "fault" line, spoon some cheese mixture lengthwise. Place pan on a baking sheet to catch any overflow. Bake at 350°F for 45 to 50 minutes. Enjoy!
