The beauty in this cake is the ingredients. It is sugar free, gluten free and dairy free. It is low GI and actually very good for you. The ingredients are a bit more expensive than your average cake but it is quite a dense cake so you will get more slices.
Tip: Get good ingredients from a health shop. You should use RAW cocoa to get all the health benefits. This means the cocoa should never be at temperatures higher than 45 degrees.
Chocolate Fudge Ingredients:
Process nuts to a fine texture.Add cacao powder, vanilla and dates and process until the mixture comes together. Line a 15cm (6in) diameter tin with cling wrap. Press 1/3 mixture into base.
Coconut Cream Ingredients:
Combine coconut with the water. Add rest of ingredients and mix well. Spread 1/2 on top of chocolate fudge layer. Take 1/2 of remaining chocolate fudge and form into a round the same diameter as the tin. Carefully place on top of coconut cream and pat down.
Spread with remaining coconut cream. Form another round with the remaining chocolate fudge and again carefully place on top of coconut cream layer. Place in fridge overnight to set.
Process all ingredients except oil to a creamy mousse like consistency. Add oil and process to combine. Adjust sweetness by adding Agave if necessary. Frost sides and top of cake, reserving some frosting for decoration.
Melt coconut oil in a basin over very warm water. Combine with cacao powder and agave and mix well. Taste and adjust the sweetness if necessary. Dip strawberries in chocolate leaving some red showing.
Place on greased paper and set in fridge. Pipe a swirl of frosting evenly around cake. Place strawberry on top - see photo. Store in an airtight container in the fridge.
