Jacket Cake

by Theresa Cahill

I made this jacket cake for my brother's birthday. He had just recently opened up his own flooring store. This was a devils food cake with chocolate pudding filling, chocolate buttercream and chocolate marshmallow fondant.

I used 2 devils food cake mixes for this cake. I added 1 box of chocolate pudding and 1 extra egg to the mix. That worked out great!

I always bake my cakes in a 300 degree oven for 20 minutes, and then raise temperature to 325 and bake for another 20 minutes. This keeps my cake tops level.

I made a packet of chocolate pudding and used it for the filling. I frosted the cake with chocolate butter cream icing. The recipe I use is below:

1 c. crisco
1 c. butter
1 tsp. vanilla extract
2 lb. sifted confectioners' sugar
1 c. cocoa
Milk as needed

I made chocolate fondant using the True Black marshmallow fondant:

6 oz. chocolate chips
1 bag of mini marshmallows
3 tbsp. of clear Karo syrup
3 tbsp. water
1 1lb. bag of powdered sugar
Black gel food coloring
Crisco

I layered and filled the cake. Then I iced it with chocolate buttercream icing and covered the cake with the black chocolate marshmallow fondant.

I draped the white fondant over each shoulder tucking just the edges under to make it look like sleeves. Next I added collar, cuffs and recreated his store logo out of fondant. Then just added detail to finish it off.

This jacket cake turned out very nice!
